BUSHA BROWNE'S JAMAICAN PRESERVES
BURNED ORANGE MARMALADE, 12 oz
Marmalade comes from marmelado the Portugese name for a quince preserve,
later adapted by the British to describe the famous preserve made from bitter
oranges, an essential part of the gentleman's breakfast. Busha Browne's
burned orange marmalade is made from the finest Jamaican Seville oranges. To
re-create this traditional recipe, we resorted to the original 19th Century
method of cooking the oranges with raw cane sugar in small batches, to achieve
a delectable caramelised burned-orange flavour. It is delicious spread on hot
buttered toast for breakfast or as an unusual basis for a bittersweet home-made
icecream.
