Helen's version of the traditional Jamaican 'hot' pepper sauce is made from the
highly prized Jamaican Scotch Bonnet pepper Capsicum Sinensis which is
fiery hot but also flavourful -- like no other pepper on earth. Island
Heat balances the 'fire' with 'flavour' by adding fruit pulp of the papaya and
