How to Brew Coffee in a Vacuum or Siphon Pot

This is a very dramatic way to brew excellent coffee. Watching the water move up into the brewing chamber and then flow back down as perfectly brewed coffee is like watching a magic trick that you can drink.


  1. 1. Pour water into the bottom glass bowl. Using very hot water will speed up the process.

  2. 2. Place the bowl either on an electric, gas or ceramic stove. For gas stoves a heat diffuser is recommended.

  3. 3. Insert the filter in the funnel (the top bowl). Gently pull the chain on the filter and secure the hook to the edge of the tube.

  4. 4. Place the ground coffee in the funnel. Use about a tablespoon of coffee for each cup. Any grind can be used, but the grind will affect the amount of time you let the coffee brew

  5. 5. Place the funnel on the bowl and bring the water to a boil.

  6. 6. The water in the bottom bowl will rise into the funnel. A small amount of water will typically remain in the bottom bowl. Turn the heat to low and stir the grounds gently to allow the coffee to brew. If the grind is fine, then a short brew of just less than a minute. If the coffee is coarse, then let it brew gently for up to 3 minutes. Do not let the water boil.

  7. 7. Remove the machine from the heat and place it on a non-cold, dry surface. The coffee should start to flow back into the bottom bowl, pulled by the vacuum in bowl.

  8. 8. When all the coffee has emptied into the bowl, remove the funnel and serve!
